New Recipe

Lately I have been stalking cooking blogs looking for new meals to cook. I am bored of the meals I have made for myself since moving out on my own at age 18. More importantly I am looking for easier meals to make on the days where I have little stamina left after chasing around Autumn (okay, that's everyday but who's counting).

I found this recipe in one of my cookbooks I've had for a few years. I had everything in my pantry and fridge already and decided to give it a try. If it went bad I knew Burger King was on Adam's way home! I decided to use the Rice cooker I bought Adam for Christmas (which I thought was silly when Adam requested it, but have grown to love) vs. the saucepan in the recipe.

Here is the recipe from the book vs. the recipe I used:

Tex-Mex Chicken and Rice Chili

1 package of Rice-A-Roni Spanish Rice
2 3/4 cups of water
2 cups of chopped cooked chicken or turkey
1 can of kidney or pinto beans, rinsed and drained
1 can of stewed tomatoes
1 green bell pepper, cut into 1/2 pieces
1 1/2 teaspoons of chili powder
1 teaspoon of ground cumin

1. In 3 quart saucepan, combine rice mix, special seasonings, water, chicken, beans, tomatoes, green pepper, chili powder and cumin. Bring to boil over high heat.
2. Reduce heat to low; simmer, uncovered, about 20 minutes of until rice is tender, stirring occasionally.
3. Top with cheese, sour cream and cilantro, if desired.
Tex-Mex Chicken and Rice Chili

1 cup of jasmine rice
1 1/2 cups of water (per rice cooker instructions)
3 chicken tenders boiled, sliced, diced
1 can of Bush's Chili Beans
1 can of diced tomatoes
1/3 cup chopped green bell pepper
1/3 cup chopped red onion
Sprinkle with chili powder, salt, onion powder, garlic powder and a bit of taco seasoning

1. Prepare rice and water according to rice cooker directions. Add in chicken, can of beans, can of tomatoes, chopped green pepper and red onion, sprinkle with my favorite seasonings and a bit of a taco packet I had open in my pantry.
2. Mix together and allow rice cooker to do all the work.
3. Top with cheese and sour cream and YUM.


It was so, so yummy! I wasn't expecting to love it as much as I did. It was seasoned perfectly with all the natural flavors. Autumn loved it as well - she had 3 helpings!


She was such a doll while I made it too - I gave her a tube of chapstick (which she playfully chewed on while talking non-stop) and she just sat and watched me from the edge of the kitchen table. She literally sat there for about an hour while I cooked and cleaned the kitchen.
